- 4 Eggs
- 100g Erythritol
- 250g Mascarpone
- 50g Unsweetened cocoa powder
- 55g Seriously Low Carb coconut flour
- 1 Teaspoon baking powder
- Vanilla extract

Method
- Beat the eggs & sweetener until lighter in colour and frothy
- Add the mascarpone and mix well
- Add the rest of the ingredients and mix until well combined
- Bake in a preheated oven at 170°c for 40-45 mins
- Allow time for the cake to cool down, then cut and eat
