  • 4 Eggs
  • 100g Erythritol
  • 250g Mascarpone
  • 50g Unsweetened cocoa powder
  • 55g Seriously Low Carb coconut flour
  • 1 Teaspoon baking powder
  • Vanilla extract

  1. Beat the eggs & sweetener until lighter in colour and frothy
  2. Add the mascarpone and mix well
  3. Add the rest of the ingredients and mix until well combined
  4. Bake in a preheated oven at 170°c for 40-45 mins
  5. Allow time for the cake to cool down, then cut and eat
Hints & Tips

Make two cakes, and sandwich peanut butter between the two cakes.
