These little biscuits flavoured with a blend of spices known as speculoos or speculass go great with a cup of coffee the meaning of the word speculoos is literally biscuits and coffee!!!

Ingredients

Dry ingredients

  • 2 teaspoons of ground cinnamon
  • 1/4 teaspoon of ground nutmeg
  • 1/4 teaspoon of ground ginger
  • 1/4 teaspoon of ground allspice
  • 112g seriously low carb almond flour
  • 70g seriously low carb coconut flour
  • 4 tablespoons seriously low carb erythritol
  • 1/4 teaspoon of bicarbonate of soda
  • 1/4 teaspoon of baking powder
  • 1/4 teaspoon of seriously low carb xanthan gum
  • Pinch of salt

Wet ingredients

  • 60g browned unsalted butter
  • 1 teaspoon of vanilla extract
  • 1 egg white whisked"

Method

  1. Put all the dry ingredients into a food processor and blend together until well combined
  2. Place unsalted butter in a saucepan and gently brown over a low heat add vanilla and set aside to cool
  3. Whisk egg white in a bowl untill it forms stiff peaks (this gives the biscuit snap)
  4. Pour butter onto dry ingredients and pulse until it resembles crumbs then add the whisked egg white an pulse until just forming a dough
  5. Empty onto clingfilm and knead into a smooth dough then pat into a brick shape, wrap and place in the freezer for 45minutes
  6. Remove from freezer and slice into 20 equal sized biscuits, you can use a fork to make a pattern around the edge
  7. Place in the fridge while you heat the oven to 150c then bake for aprox 25 minutes
  8. Remove from the oven, cool and enjoy
